These little gems, no bake chocolate oatmeal cookies, go waaaay back for me. My mom was an elementary school teacher and she got the recipe from the cafeteria lady at her school. I have made them over the years, but for awhile, my gut has been healing and it is time to bring these back to our household. Only this time, they are healthier. I won’t say they are healthy, but they are really good!
You mix all of the ingredients and cool them until they harden enough to be eaten! Some even say that you can lose weight with these, although given the sugar content, I am not so sure about that.
No Bake Chocolate Oatmeal Cookies
1/2 cup of butter or palm shortening
1 cup of coconut sugar
1/2 cup of nut butter (I used sunflower nut butter)
1/2 cup of milk of your choice
1 tsp of vanilla
1/4 cup of raw cocoa powder
3 cups of quick oats or oats that are pre-soaked
How to make:
Melt all of the ingredients except the oats in a medium-sized saucepan. Until completely melted and hot.
Add the oats into the chocolate nut sauce, stirring well. Spread the mixture on a baking sheet, or drop by spoonfuls onto a cookie sheet. Cool, cut if necessary and store in a tightly sealed container. You can even use cookie cutters like I did with these hearts for special holidays.
Cool either in a quiet, secluded location with no cookie snatchers, or in the refrigerator for an hour or so. Serve with milk. Makes about 1 1/2 dozen cookies.
