I can remember it like yesterday when I read a recipe which required a white sauce. White sauce? What is that? I scrambled to find out how to make it and discovered that a while sauce is the first step to making a cheesy cream sauce. You know, the stuff you put on top of pasta and meat to make mac and cheese? While I have been known to take a few shortcuts with my cheesy cream sauce, this recipe has been my friend over the years. A white sauce is the same thing as a cream sauce.
I can add this sauce to pasta and chicken, or pasta and ham, or add more cheese and make it a dip. Or, I changed it up a bit by adding a few tablespoons of salsa or Rotel to make queso sauce. You can also skip the cheese if you want!
You can add just about anything to a white sauce to get everyone in the family’s attention. Plus, it is quick and easy to make, like can we say 5 minutes?
Cheesy Cream Sauce Recipe
2 TBl of butter (you can use coconut oil too)
2 TBl of arrowroot, tapioca starches or flour
1/4 tsp of sea salt
1 cup of milk (You can also use coconut milk. Almond milk just doesn’t taste the same.)
1/4 cup of grated or soft cheese
Start with a small saucepan, or a glass microwaveable measuring cup. Heat the butter to melting and then stir in the flour and salt to make a paste. Stir in the milk and mix the paste as much as it will mix.
Heat the mixture, stirring occasionally until the mixture forms a thick sauce. Add the cheese and heat and stir until the mixture is a cheesy sauce. Add a bit more milk if you want to thin it out some and salsa or other seasonings. Make it cheesier if you so desire. Serve on top of pasta and meat, or as a dip with chips. Makes about 1 1/4 cups of sauce.
