We go through so much liquid stevia, and I kept watching all that money thrown to bottles of stevia for a hefty price of $10+. Hoarding stevia was becoming a concern around here;-) So, making my own stevia extract became a necessity!
What’s funny, is it took me all of about 20 minutes to bring it to a boil, and about 30 minutes to cool it. That’s it.
Ingredients for stevia extract:
1/2 cup of dried stevia leaves
1 1/2 cup of water (Truly, I guessed)
I put the ingredients into a small saucepan on the stove, then brought them to a boil. I lowered the heat for about 10 more minutes, and simmered until the liquid was roughly 3/4 of a cup left, leaving me a concentrate. I drained the leaves from the liquid with a strainer into a measuring cup. I allowed it to cool, then filled a clean dropper bottle and placed it into the refrigerator; the other half I poured into a jar and saved in the freezer for later.
Since we use stevia more in drinks than in recipes, it works well. It takes a few drops of concentrate to sweeten, plus, it can be added to recipes. 1 TBL of homemade stevia liquid equals about 1 cup of sugar if you want to bake with it.
